Our Story

Huntingfield Whisky is the result of dedication and expertise at White Label Distillery, Tasmania’s first purpose-built contract distillery. Since opening in 2018, WLD has been at the forefront of Tasmanian whisky, producing premium spirits and supporting the growth of Australia’s whisky industry.

Led by Anthony White, whose passion for distilling spans over 15 years, we began laying down barrels of single malt whisky with the aim of creating something uniquely our own—a whisky that embodies everything we’ve learned and celebrates our connection to Tasmania.

In 2024, that vision became a reality. Huntingfield Whisky was born, named after the location of our distillery. Every bottle is crafted and matured in Tasmania, combining our deep respect for tradition with a commitment to quality and innovation.

Our Approach

At Huntingfield Whisky, our approach is built on four pillars that define the quality and character of every bottle we produce: a state-of-the-art distillery, premium Tasmanian ingredients, carefully selected casks, and the unique influence of Tasmania’s cool, temperate climate.

At the heart of our operation are four Tasmanian-made copper pot stills, paired with two mash tuns and three bonded stores. Designed to deliver the highest quality malt spirit, these stills are crafted with precision to bring out the best in every batch. Every step of production, from milling to fermentation and distillation, is completed on-site, giving us complete control over quality.

Our whisky begins with Tasmanian malted barley, grown under some of the purest air in the world. Paired with pristine water sourced from the slopes of Mt. Wellington, these natural ingredients form the foundation of our spirit, lending a distinctive sweetness and creamy depth to the palate.

Every drop of Huntingfield Whisky captures the essence of Tasmania’s natural beauty and the care we pour into every stage of production.
The casks we use are at the heart of what gives Huntingfield Whisky its complexity and character. Each barrel undergoes a meticulous refurbishment process to ensure it is primed to impart its unique qualities to the whisky.

This begins with careful reconditioning, where the cask is inspected, cleaned, and prepared to extend its lifespan while maintaining its integrity. The wood is then toasted and charred—a process that enhances the cask’s ability to release rich flavours and aromas into the spirit. Toasting caramelises the natural sugars in the wood, creating layers of sweetness and spice, while charring develops depth, adding notes of smoke, vanilla, and caramelised oak.

Our casks are selected for their ability to bring out the best in Huntingfield Whisky, whether through the soft sweetness of ex-bourbon, the rich fruitiness of ex-sherry, or the bold warmth of ex-tawny. Every cask plays a vital role in shaping the layers of flavour that define each bottle.
Tasmania’s cool, temperate climate provides the ideal conditions for maturing whisky. The slower ageing process allows the spirit to develop nuanced flavours, while the island’s famously changeable weather encourages the whisky to expand and contract in its cask, absorbing complex characteristics over time.
